Recipes you can try with raw mango this summer

The season of green raw mangoes has come. The most well-known quality of raw mangoes is their sour taste profile, giving meals a refreshing edge. Throughout the summer, raw mangoes are a beloved seasonal treat. Apart from chilled beverages like 'Kacha Aamer Shorbot' or 'Aampanna,' you can make some simple dishes using green mangoes.

Aamshotto:

Yes, you read it right! Aamshotto can be prepared with raw green mangoes. To make it, you need four mangoes. Peel the mangoes and cut them into cubes. Then, boil these cubes in three cups of water for five to seven minutes on medium heat. 

Once the mangoes appear soft, use a spatula to smash them perfectly. This will create a puree-like consistency. After that, strain the puree, put it in another pot, and add two cups of sugar, one tablespoon of chilli flakes, a teaspoon of black pepper powder, and a pinch of salt. Stir it for 8/9 minutes in medium flame until it becomes sticky. 

At this point, turn off the flame and blush oil on flat plates. Pour the mixture on the plates evenly. Then, dry them in direct sunlight for one day. Please gently remove the thin layer, cut it down, and enjoy!

Chutney:

Speaking of raw mangoes suggests talking about chutney. Chutney is a classic dish made with raw mangoes that everyone loves. It can be easily prepared at home with some simple ingredients. 

For this, you first have to heat one tablespoon of mustard oil, add two dry chillies and half a teaspoon of pachphoron, and fry them for 30 seconds on medium to high flame. 

Then add 250 grams (1 big mango) of raw mangoes, which are peeled and cut into long slices; add one teaspoon of turmeric powder and half a teaspoon of salt. 

Fry these ingredients for two to three minutes on medium to high flame. After that, add two cups of water and cook the mangoes for five to seven minutes until they become soft. At this moment, add 1 cup of sugar and cook it for five to six minutes. Turn off the heat when the chutney gets thick—not too stuck. Once it has chilled, it is ready to serve.

Lolly:

Making raw mango Lollies at home is pretty simple. Why not give it a try? Wash four mangoes and boil the mangoes in two cups of water with the lid closed on medium flame. It will take approximately 10 minutes. Boil the mangoes until their skin becomes pale and begins to split slightly. 

Then, unpeel the mango when it becomes slightly chilled. Mash it with your hand and remove only the puree. Then blend it with one cup of powdered sugar, mint leaves as per taste, half a teaspoon of salt, and the remaining water in which the mangoes were boiled. 

Blend it until everything is evenly combined. Pour the mixture into a popsicle mould and freeze it overnight. Serve it chilled. 

Candy:

It is a dried version of sweet and sour candy. To prepare it, peel two mangoes, cut them into long slices, and remove the hard layer surrounding the seed. 

Then, cook the mango in one cup of water and half a teaspoon of salt for two to three minutes with the lid closed. 

The slices will stay whole and tender without breaking. Then, take the mangoes into a separate bowl, add one cup of sugar and mix it well. The sugar will melt and this mixture should be kept overnight in the refrigerator. 

The mango slices will soak up the sugar syrup. At this point, drain the excess sugar syrup, brush flat plates with oil and keep the mango slices on the plate one by one. Dry it in direct sunlight for two to three days. Try to flip the slices every three to four hours. Then, keep the dried mango candy in an airtight container with powdered sugar.

 Jelly:

Jelly is the perfect complement for bread. Homemade jelly is healthy yet delicious. You need to peel two medium-sized mangoes and cut them into cubes to make it. 

Then boil it in two cups of water until it changes colour. After that, strain the mango and keep the excess water for later use. Then, make a puree by mashing it. Then, cook half a cup of sugar and one cup of mango-boiled water until it boils. 

At this stage, in a separate bowl, take one and a half tablespoons of gelatin and two tablespoons of water and mix well. Pour the gelatin mixture into the sugar syrup and cook for five minutes. Strain the mixture, pour it into the container, and keep it in the refrigerator until it sets.
